Coconut Blueberry Pops

Ingredients: 1 1/2 cups coconut milk 2 tablespoons maple syrup 1 teaspoon vanilla extract 1 cup blueberries, fresh or frozen   Instructions: Mix the coconut milk, maple syrup and vanilla in a blender until smooth. Add the blueberries and pulse until they've been "smashed" but not completely blended. Pour the mixture into popsicle molds and freeze for at least 5 hours or overnight.   Recipe inspired by: Wallflower Girl

Ginger Lemonade

Ingredients: 1 piece of 10 cm. ginger, peeled and chopped 1 cup lemon juice (about 3-4 lemons) 1/3 cup maple syrup 6 cups water 2 lemons cut into slices for garnish   Instructions: Place the ginger in a food processor or blender.
